Dr. Mian Riaz, editor and Head of the Extrusion Technology Program at Texas A & M University
follows the practical short course philosophy he has perfected during 15 years of teaching technical
processing techniques. Nearly 8,000 people have been trained through this program and are applying
their knowledge and skills at processing companies throughout industry. He has gathered a group
of authors that have extensive experience in their specialties.
Chapters in this book are arranged in a procedural, top-to-bottom approach.
First, different designs of extruders (dry, single, twin, universal pellet cooker) and expanders are discussed
in detail. The nutritional qualities and processing characteristics of raw materials are covered in two
separate chapters. Other chapters explain the pre- and post- extrusion processes of grinding,
drying, and coating. More than 80 percent of extrusion systems sold today come with automation and
the benefits of operational automation are thoroughly reviewed. Die design plays an important role in shapes,
production, as well as creating floating and sinking characteristics in feed. Once feed is made, shelf life,
palatability, and microbial control are very important. The last chapter is focused on troubleshooting
and extrusion operation.
