What we eat, why we eat and what we should eat, were all on the menu at the International Sweeteners
Association's 1993 Annual Conference held in Brussels - for the first time in three languages. Thinking,
planning and talking about food as well as buying, preparing and eating it occupy a significant portion
of our lives. Food is the centrepiece of family life
and of many social and business occasions. Cuisine, the conference was told, is the language of food and has
deeply ingrained cultural roots.
Emphasising the importance of health and dietary education, theMinisterfor Health of the Brussels Region
welcomed the participants, including a number of nutritionists and dietitians. Why we eat was addressed
by three internationally eminent scientists who explored the biochemical and psychological relationships
between sweeteners and appetite
The talks are summarised here in eight chapters covering topics such as additives, labelling and claims,
sweetener consumption patterns in Denmark, sweeteners, appetite and body weight, intense sweeteners and insulin secretion,
sweet taste and dietary restraint, miracle diets, enjoying low-calorie sweeteners and responsible diet and health.
